Elbow Macaroni and Kidney Bean Salad
I found this simple side salad on allrecipes.com and I made a couple of changes. Of course I made a couple of changes. I used regular mayo rather than light and added a chopped jalepeno for a little heat

American Goulash
Found on the Eating Well website, American Goulash is a tasty, easy & economical One-Pot recipe. Also known as Old-Fashioned Goulash, Homemade Hamburger Helper and (most amusing to me) American Chop Suey. I made a couple of changes and one addition. I used Fire-Roasted Diced Tomatoes w/Green Chili Peppers, Smoked Paprika, and I added about a cup of chopped baby Kale.

Spaghetti w/Garlic & Olive Oil
Found on the Tasty website, this is a very simple recipe. I made two changes and one addition. I used Crushed Rep Pepper rather than Red Chili Flakes and left out the Parsley. I added Broccoli because . . . well I like Broccoli.

Chickpeas alla Vodka
I found this on the Eating Well website. I preferred grated Parmesan vs shredded. The original calls for a side of toasted whole-wheat baguette. For a gluten-free version, you can either leave off the bread or replace with a gluten-free option.

Creamy Chicken, Brussels Sprouts & Mushrooms One-Pot Pasta
I found this on the Eating Well website. I made two changes to the original. I replaced water with chicken broth and added 1/4 teaspoon of black pepper.

Black-Bean and Sweet-Potato Stew
I found this on Martha Stewart’s website. The original recipe calls for topping the recipe with shredded cheese. To keep it vegan you can either forget the cheese or replace it with a vegan version.
